Grease 4 mini muffin pans (12 per pan). Over medium high heat, sauté mushrooms, onions and garlic in 2 Tablespoons oil until mixture browns lightly, stirring often.
In large bowl, combine onion mixture and remaining ingredients. Pack lightly into muffin pans and bake about 15 minutes at 400° F. or until golden brown. Cool for 2 minutes then remove from pans.
Serve immediately or refrigerate and reheat wrapped in foil
at 400° F.
